Graf played football for the USC Trojans and then for the Los Angeles Rams, beginning his film career when hired to stunt double Dick Butkus in the Disney comedy Gus (with Edward Asner and Don Knotts). Stuntman credits include Old Dogs, Star Trek II: The Wrath of Khan, Pirates of the Caribbean: The Curse of the Black Pearl, Captain America: The First Avenger, the 1987 Dragnet, and Total Recall. He was stunt coordinator (and often 2nd unit director as well) on Jerry Maguire, A Knight's Tale, Wayne's World, and The Waterboy.
Due to his sports background, Graf coordinated football scenes in films including The Ladykillers and both film and TV versions of Friday Night Lights. TV stuntwork includes Simon & Simon, Agents of S.H.I.E.L.D., The Middleman, and Scandal. As an actor, Graf has often played stunt-related roles such as guards, henchmen, and drivers, as well as football personnel (coaches and referees) on series like Charlie's Angels, Desperate Housewives, Becker (as a Santa Claus in a Christmas episode), and Sons of Anarchy. He has had a few character roles besides in films Poltergeist, Looney Tunes: Back in Action, Brewster's Millions, and Magnolia, and recurred on HBO's Deadwood as Captain Turner.
