Playing the Bones is a Sesame Street song sung in Episode 2820.
Susan remembers when she was little and her father played musical bone instruments while she sat on his lap, mimicking the movements with her empty hand. Eventually he would give her her own set and teach her how to play them with him. Even in the present, Susan says she'll picture the sound of the bones playing and it helps her get to sleep.
