Roy Choi (b. 1970) is a world-renowned chef who helped popularize the gourmet food truck fad, which loosely inspired Jon Favreau's 2014 movie Chef.
Choi appears on Muppets Now in the episode "Getting Testy" preparing food with Beverly Plume.
He also appeared as himself in Gilmore Girls: A Year in the Life, as well as several documentaries and television appearances.
